True to the definition of a ‘fritter,’ these Bacon and Butternut Quinoa Fritters are soft and moist on the inside and crispy on the outside. No deep-frying needed, just a simple pan-fry in our 100% Pure Avocado Oil. Smoky bacon, sweet butternut squash, hearty kale, and crisp onions form a flavorful patty that’s made more filling with white quinoa. Try these out paired with a salad for lunch or alongside a serving of protein at dinner.

Ingredients

  • 4 slices bacon
  • 2 cup cooked white quinoa
  • 2 cup cooked & pureed butternut squash, sweet potato or pumpkin also work
  • 2 eggs
  • 6 leaves kale chopped
  • 2 scallions chopped
  • 1/3 cup tapioca starch or ¼ cup of your favorite gluten free flour
  • 1 tsp smoked paprika
  • 2 tsp ground cinnamon
  • 1 tsp sea salt
  • ½ tsp black pepper
  • Chosen Foods 100% Pure Avocado Oil for sautéing
  • For garnish: coconut cream or sour cream as desired

Instructions

  1. In a large skillet, cook the bacon until crispy. Remove and let cool. Set the skillet aside with remaining bacon grease for later. Chop the cooled bacon into small pieces.
  2. While the bacon is cooking, combine the remaining ingredients in a large bowl. Add the crisped bacon and mix well.
  3. Heat the large skillet again. Add a bit of Avocado Oil if there isn’t much bacon grease at the bottom. With a large cookie scoop or spoon, drop 2” balls of the batter into the hot pan. Press the tops down slightly so they form discs. Cook on medium heat until golden brown, about 3 minutes per side.  Add more Avocado Oil between batches, as needed.
  4. Remove the cooked fritters to a cooling rack. Garnish with additional sea salt, as desired. Enjoy the fritters warm with coconut cream or sour cream.  Store in the refrigerator for up to a week.
