Green Avocado Cucumber Smoothie
After a couple of hours at the gym or a sweaty dig in the garden, there’s nothing better than a green smoothie to hydrate and nourish the bod. Coconut water replenishes much-needed electrolytes, avocado supplies energy-boosting fats, while celery is high in fiber, vitamin C, and beta-carotene (a terrific antioxidant). Fresh squeezed lime ties it all together with SoCal style.
Time: 10 minutes
- 1 cup celery (about 2 stalks)
- 1 cup cucumber (about 1 ½ Persian cucumbers)
- ½ medium avocado
- ½ lime, juiced
- ½ cup coconut water
- Pinch of salt
- In a blender, add celery, cucumber, avocado, lime juice, coconut water, and a pinch of salt.
- Blend for a couple of minutes starting on low and increase the speed to high until smooth and well blended.
