This grain-free banana bread recipe is moist and delicious and only takes only a few minutes to prepare. The secret is Chosen Food’s new avocado mayo! First the wet ingredients are whisked together before adding the dry ingredients and since this is a grain free quick bread recipe, you wont have to worry about accidental over mixing! It is best served slightly warm with a tab of melted grass-fed butter.
Grain-Free Banana Bread
- 1 cup mashed ripe bananas
- 1 cup Chosen Foods Avocado Oil Mayo
- ¼ cup honey
- 1 ¼ cup almond flour
- ¾ cup potato starch
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tbsp cinnamon
- ¼ tsp fresh grated nutmeg
- pinch of salt
Preheat the oven to 350ºF. In a large mixing bowl, whisk together the mashed bananas, mayo, and honey until combined.
In a separate bowl, combine the remaining dry ingredients. Whisk together to remove any clumps and all the dry ingredients are fully incorporated. Add the dry ingredients to the wet, banana mixture. Whisk to combine.
Line a 9x5 inch loaf pan with parchment paper. Pour the batter into the lined loaf pan and bake for 60-65 minutes. Oven times may vary depending on how uniform your oven is. Allow banana bread to cool for at least 10 minutes before serving.
