Peanut Butter & Chocolate Chip Blondies
A little like a peanut butter cup in bar form, these Peanut Butter & Chocolate Chip Blondies are a delicious faux brownie. They’re gluten-free but still soft and chewy on the inside. Our Organic Chosen Oil Blend makes them healthier by subbing out for vegetable oil and they are even dairy-free if you opt for dairy-free chocolate chips. They are best enjoyed warm but keep well in the fridge or freezer.
- 4 eggs
- ½ cup coconut palm sugar
- ½ cup Chosen Foods Organic Chosen Oil Blend
- ½ cup creamy peanut butter or other creamy nut butter
- 2 tsp vanilla extract
- ½ tsp sea salt
- ½ tsp baking powder
- ¼ tsp baking soda
- 1 ⅓ cup almond flour
- 1 cup dark chocolate chips
- Chosen Foods 100% Pure Avocado Oil Spray for greasing
Preheat the oven to 350°F. Line a 9x13 baking pan with parchment. Grease lightly with Chosen Foods Avocado Oil Spray.
Add the eggs and coconut palm sugar to the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed until the sugar is mostly dissolved, about 2-3 minutes. Add the Chosen Oil Blend and the peanut butter and mix until smooth. Add the vanilla, sea salt, baking powder, baking soda, and almond flour. Mix until very smooth, stopping to scrape down the sides as needed. Add the chocolate chips and mix briefly to incorporate.
Scoop the batter into the greased baking pan (the batter will be very thick). Smooth it out flat, greasing a spatula with Avocado Oil Spray if needed to press the batter down. Bake for 24-28 minutes, or until the top is lightly golden and a toothpick comes out clean. Cool the bars in the pan for 10-15 minutes before serving.
