Quinoa Fried “Rice”

Quinoa Fried Rice

A healthier take on a familiar restaurant fried rice. This Quinoa Fried Rice is made with white quinoa (though it’s tough to tell the difference!) so it’s full of extra vitamins, minerals, and fiber that you won’t find in your local carryout version. It’s perfect as a side dish or a main course with a little chicken or shrimp tossed in.


Ingredients

  • 1 medium onion chopped
  • 2 cloves of garlic minced
  • ¼ cup chopped pineapple
  • 3 tbsp soy sauce, gluten-free tamari or coconut aminos
  • 1 cup uncooked white quinoa
  • 1 ¼ cup filtered water
  • 1 tsp sea salt
  • ¼ tsp black pepper
  • 2 scallions chopped
  • 4 oz frozen peas and carrots
  • 2 eggs, whisked
  • 3 tbsp Oi! Toasted Sesame Oil
  • Chosen Foods Avocado Oil


Instructions

  1. Heat a large sauce pot over medium heat. Lightly grease the pot with avocado oil and add the onion. Cook until translucent, about 5 minutes. Add the minced garlic and chopped pineapple. Sauté until fragrant, about 1 minute. Add the soy sauce, quinoa, water, sea salt, and black pepper. Bring the water to a simmer, cover and cook for 20-25 minutes, or until the liquid has been absorbed.
  2. Stir in the chopped scallions, frozen peas and carrots, whisked egg, and sesame oil. Cover and let stand for 5 minutes to cook the egg through and warm the frozen vegetables before serving.
