We took everyone's favorite rainbow sushi roll and transformed it into a photo-worthy salad packed with veggies! The dressing is made with Wasabi Avocado Oil Mayo to give it a little kick while staying true to the classic sushi flavor you crave! Mmmm!
Rainbow Roll Bowl with Wasabi Mayo Vinaigrette
Ingredients
Salad Ingredients
- carrot
- red pepper
- cucumber
- purple cabbage
- radish (watermelon or daikon)
- avocado
- kale
- lemon
- sesame seeds
- nori seaweed strips
- cilantro

cooked shrimp (optional)
Wasabi Mayo Vinaigrette
- 3 tbsp Chosen Foods Wasabi Avocado Oil Mayo
- 1 tbsp coconut vinegar
- 1 tsp lemon juice
- 1 sprinkle black pepper

1 tsp tamari, soy sauce or coconut aminos
Instructions
For the Wasabi Vinaigrette

Whisk all ingredients together with a fork until smooth.
For the Salad

Place the kale in the bottom of your salad bowl as a base. Next, layer with all the remaining veggie slices & shrimp – in a rainbow, or mixed together if you prefer! Top it all off with sesame seeds and sprigs of cilantro, and drizzle on the Wasabi Vinaigrette.
