Chia Banana Bread
- 3 eggs
- 1/4 cup Chosen Foods Organic Chosen Blend Oil
- 1/4 cup canned coconut milk
- 1/4 cup honey
- 2 tbsp apple cider vinegar
- 1 tbsp vanilla extract
- 1 2/3 cup blanched almond flour
- 2/3 cup tapioca or arrowroot starch
- 1/4 cup coconut flour
- 3 tbsp chia seeds
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 1/8 tsp ground nutmeg
- Chosen Foods Avocado Oil Spray for greasing
Preheat the oven to 325°F. Spray a large loaf pan with Chosen Foods Avocado Oil Spray.
Add the eggs, Organic Chosen Blend Oil, coconut milk, mashed banana, honey, apple cider vinegar, and vanilla extract to the bowl of a stand mixer fitted with the paddle attachment. Mix on medium speed until smooth.
In a separate bowl, combine the almond flour, tapioca starch, coconut flour, chia seeds, baking powder, baking soda, sea salt, and nutmeg. Whisk well.
Add the dry ingredients to the stand mixer. Mix on low to incorporate. Move the speed to medium to mix well. Allow the batter to sit 3-5 minutes for the flours to absorb moisture. Mix again briefly.
Pour the batter into the loaf pan. Bake for 80-90 minutes, or until a toothpick inserted into the center comes out clean. Rest the bread in the loaf pan for 10 minutes before inverting to remove. Cool on a cooling rack for 20 minutes before serving. Store extras in the refrigerator for up to a week.
