Rich cacao powder with maple syrup for sweetness, plus ripe avocado and banana to give it a super smooth texture. Blend everything together with our nutrient-rich chia seeds to thicken the pudding and give it a tiny bit of texture. Perfect for a dessert or fun breakfast and easy to double so you have extra in the fridge when that sweet craving hits.
Yields: 4 servings
½ c. canned coconut milk
2 tbsp. Chosen Foods Chia Seeds
¼ c. maple syrup or honey
1 tsp. vanilla extract
2 ripe avocados
1 ripe banana
¼ c. raw cacao powder
Large pinch of sea salt
Optional for garnish: whipped coconut cream and raw cacao nibs
Chocolate, Banana & Avocado Pudding Directions:
In a small bowl, whisk together the coconut milk, chia seeds, maple syrup, and vanilla extract. Set the bowl aside for 3-5 minutes to plump up the chia seeds.
Add the avocados, banana, cacao powder, and sea salt to the bowl of a large food processor. Process until very smooth, stopping to scrape down the sides as needed.
Add the reserved chia and coconut milk mixture to the food processor. Process to combine, about 15-30 seconds. Enjoy the pudding immediately or for a firmer texture, refrigerate overnight before serving.
