Homemade Spiced Berry Jam with Chia Seeds
Spiced Berry Jam With Chia
- 3 cups berries of choice fresh or frozen
- 1 lemon juice & zest
- 1 orange juice and zest
- 1 pinch of sea salt
- 1 cinnamon stick
- 3 star anise
- 1 allspice berries
- 2 tsp chia seeds
- 1 tsp vanilla extract
Combine berries, lemon juice and zest, orange juice and zest, and sea salt in a medium saucepan. Place the cinnamon stick, star anise, and allspice berries in a piece of cheesecloth closed tightly with kitchen twine or a small spice bag cinched tightly. Tuck the bag beneath the berries. Heat the mixture over medium heat uncovered (stirring occasionally) for 10-15 minutes, or until berries have burst and softened.
Remove the spice bag and discard. Add in chia seeds and mix well. Cook another 3-5 minutes, or until the jam has thickened. For an even thicker jam, continue to cook another 5-10 minutes (as shown in the image).
Remove from heat and stir in the vanilla. Can be served warm, room temperature, or chilled. Keep in an airtight container in the refrigerator for up to a week.
