Berries & Cream Chia Popsicles
For a light and healthy homemade popsicle, try this delicious Berries & Cream Chia Popsicles variation. They keep in the freezer for quite a while but you’ll find your family will gobble them up pretty quickly! With fiber from the chia seeds, protein from the yogurt and almond milk, and sweetness from the jam, these popsicles are both filling and satisfying.
Servings: 6 popsicles
- ⅓ cup chia berry jam or your favorite fruit-sweetened jam or ⅔ c. Greek-style yogurt (sub coconut cream for dairy-free)
- ⅓ cup almond milk or other milk of choice
- ⅓ cup honey
- 2 tsp vanilla extract
- 3 tbsp chia seeds
Add about 1 tablespoon of chia jam to each of the popsicle cups. Set aside the mold.
In a blender, add the yogurt, almond milk, honey, and vanilla extract. Blend until smooth. Pour the creamy mixture over top of the berry jam in the molds. Use a knife to gently move the jam around to create a swirl effect.
Top the creamy layer with about ½ tablespoons chia seeds each and gently insert the popsicle stick. Freeze until solid, about 6 hours.
