Gingerbread Snacking Cake with Maple Whipped Cream Recipe

Ingredients for Maple Whipped Cream Recipe: 

  • ½ cup heavy cream
  • 2 Tbsp. sour cream
  • 2 Tbsp. pure maple syrup
  • kosher salt

 

Directions for Gingerbread Snacking Cake Recipe: 

  1. Place a rack in middle of oven; preheat to 350°. Line an 9x13” baking dish with parchment paper and spray with Chosen Foods 100% Pure Avocado Oil Spray; set aside. 

  2. Dissolve baking soda in 1½ cups boiling water in a large bowl and let cool completely.
  3. Whisk together flour, cinnamon, ginger, cloves, and baking powder in a medium bowl to combine.
  4. Combine Chosen Foods 100% Pure Avocado Oil and sugar in a large bowl and whisk vigorously for 1 minute. Add eggs, one at a time, mixing well after each addition. Add molasses and whisk for another minute. Mix in the dry ingredients in three batches, alternating with the baking soda water and ending with the dry ingredients (batter will be thin).
  5. Transfer batter to prepared pan and bake for 50-55 minutes, rotating halfway through, until a tester or toothpick inserted in center of cake comes out clean. Let cake cool in pan.

Directions for Maple Whipped Cream Recipe: 

  1. Just before serving, pour heavy cream into a large bowl and add a pinch of salt. Vigorously whisk until soft peaks form. Whisk in sour cream and maple syrup until just incorporated. 
  2. Cut cake into slices and serve each with a dollop of maple whipped cream.
