Overnight Chocolate Chia Seed Pudding

This simple, 6 ingredient recipe for chocolate chia seed pudding is naturally sweetened and is dairy free. I love the combination of chocolate and coconut in this pudding, but you can easily substitute your favorite flavors. Substitute almond milk and raw almonds for the coconut, swap the maple syrup for other sweeteners, etc. As long as the liquid to chia seed ratio is the same, the possibilities are endless.

Ingredients

  • 1 cup coconut milk
  • 3 tbsp cocoa powder
  • 3 Tbsp maple syrup
  • 1 tsp vanilla extract
  • 3 tbsp coconut shredded or flake
  • 4 tbsp Chosen Foods Chia Seeds or 4 packages of the Chosen Foods Chia Slims

Instructions

  1. In a blender or food processor, combine the coconut milk, cocoa, maple syrup, vanilla, and dried coconut. Blend until well combined.
  2. Add Chosen Foods chia seeds to blender and pulse to combine.
  3. Pour into 2 pint sized containers. Refrigerate overnight or until pudding reaching the desired consistency and enjoy!
