Parmesan Almond Chicken
- 2 ½ lbs boneless, skinless chicken breasts
- ¼ cup Chosen Foods Avocado Oil Mayonnaise
- ¼ cup grated parmesan cheese
- ¼ tsp dried oregano
- ½ tsp sea salt
- ¼ tsp black pepper
- 2 tbsp almond meal/flour
Preheat the oven to 400°F. Line a sheet pan with parchment or aluminum foil. Pat the chicken dry and set it aside.
In a wide bowl, whisk together the mayonnaise, parmesan cheese, oregano, sea salt, and black pepper. Dip the chicken into the mix and coat well on both sides.
Lay the coated chicken onto the lined sheet pan. Sprinkle one tablespoon of almond meal along the top side of each chicken breast. Bake for 20-25 minutes, or until the top is golden brown.
