This peach salsa is so refreshing! The cool mint, sweet peaches, and small kick from the jalapeños make these flavors irresistible. The avocado oil also adds an incredibly smooth silky texture. Serve over fish or with your favorite tortilla chip.
Peach & Mint Salsa with Avocado Oil
- 4 Peaches
- 1 bell pepper
- 2 tbs of fresh mint
- 1 tbs of jalapeño
- 2 tbs of shallot or onion
- 1/2 tbs of fresh grated ginger
- 3 tbs of avocado oil
- The juice from 1 Meyer lemon
- salt and pepper to taste
Chop peaches and bell pepper into small pieces.
Roughly chop the mint, jalapeño and onion.
Combine the above ingredients, plus the grated ginger in your food processor.
Give the mixture a few pulses until the right texture is achieved (don't turn on all the way or salsa will liquefy).
Drizzle the avocado oil and lemon juice over the mixture and give a few more pulses to incorporate.
Stir in salt and pepper.
Chill for at least an hour, serve and enjoy!
