Quick Pickled Sesame Cucumbers
Pickling your favorite vegetable is an easy, quick way to make your meals more interesting and flavorful. A quick pickle process can be done with salt and vinegar, oils and sweetener being optional for added flavor. Extra virgin sesame oil adds a healthy and delicious flavor to this quick pickled cucumber and onion, making it great for enjoying atop a salad, protein, or with your favorite Asian-inspired dish.
Ingredients
- 2 Chosen Foods extra virgin sesame oil
- 2 vinegar of choice red wine or rice wine vinegars work well
- ½ tbsp raw honey
- 1 tsp sea salt
- pinch ground pepper
- 1 english/seedless cucumber
- ½ medium red onion
- Optional for garnish: sesame seeds
Instructions

In a medium bowl, whisk together sesame oil, vinegar, honey, sea salt, and pepper. Using a mandolin slicer (or very sharp knife), slice both the cucumber and onion into even, thin slices and add them to the dressing mix. Toss well and allow to sit before serving, 15+ minutes at room temperature (the longer they sit, the more “pickled” they will taste).
