
You’ve heard of overnight oats but have you tried overnight quinoa? Cook the quinoa beforehand to keep it extra tender and it will still soak up all the flavors you surround it with in this easy overnight recipe. Chia helps to bulk up the mix and dried fruit, chopped apple, and warm spices give this a delicious fall flavor. Rich in protein, fiber, and minerals, this overnight quinoa is a great way to start your day.
Ingredients:
1 c. Royal White Quinoa, cooked
½ c. raw sliced almonds
1/3 c. dried fruit of choice (cranberries or cherries work well)
1 apple, chopped
½ t. sea salt
2 t. ground cinnamon
¼ t. ground cloves
½ t. ground ginger
1 T. vanilla extract
2 c. almond milk (or other milk of choice)
Directions:
Mix all ingredients together well and pour into a glass jar or container. Seal tightly with a lid and store in the refrigerator overnight.
Pull out of the refrigerator in the morning and stir well. Optionally this can also be warmed up before serving. Garnish with extra dried fruit, chopped apple, or more milk, as desired. Best if eaten within 2-3 days
