Strawberry Oatmeal Crumble Bars

Hearty, sweet, and nourishing, these Strawberry Oatmeal Crumble Bars will be your new favorite breakfast. A light cake base is layered with strawberry jam and an oatmeal chia crumble topping. They freeze well when wrapped individually and double as a delicious dessert or even a part of your child’s lunchbox.


Ingredients

For the batter

  • 1 egg
  • ½ cup Chosen Foods 100% Pure Avocado Oil
  • ½ cup honey or maple syrup
  • 1 tsp vanilla extract
  • ¾ cup blanched almond flour
  • ¼ cup tapioca starch
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp sea salt

For the strawberry jam

  • 4 cup chopped strawberries about 8 oz.
  • 1 tbsp tapioca or arrowroot starch
  • 3 tbsp honey or maple syrup
  • 2 tbsp fresh lemon juice
  • Pinch of sea salt

For the oatmeal chia crumble

  • 1 ½ cups whole rolled oats
  • 4 tbsps chia seeds
  • 3 tbsps coconut palm sugar or organic sucanat
  • 2 tbsps tapioca or arrowroot starch
  • 4 tbsps butter cubed or coconut oil at room temperature
  • Chosen Foods Avocado Oil Spray for greasing

Instructions

  1. Preheat the oven to 350°F. Grease an 8x8 baking dish with Chosen Foods Avocado Oil Spray.

  2. Prepare the Strawberry Jam first by combining all the jam ingredients in a medium saucepan. Stir well and place over medium low heat. When the mix starts to bubble, cover and turn the heat to low. Cook for 10 minutes. Uncover and cook another 10 minutes, stirring occasionally. The strawberries should be broken down and the jam should be thick. Remove from the heat and allow to cool slightly before layering.
  3. Prepare the batter by adding the egg, avocado oil, honey, and vanilla extract to the bowl of a stand mixer. Mix on medium speed to combine. Add the blanched almond flour, tapioca starch, baking powder, baking soda, and sea salt. Mix on medium speed to combine. Move the speed to high until the batter is very smooth.
  4. Prepare the Oatmeal Chia Crumble topping by adding the oats, chia seeds, coconut palm sugar, and tapioca starch to the bowl of a large food processor. Pulse a few times to combine the ingredients. Add the butter and process until the mixture just barely comes together. It should be crumbly and slightly sticky.
  5. Layer the bars by spreading the Cake Batter into the greased baking pan. Spread the Strawberry Jam over top of the batter. Sprinkle the Oatmeal Chia Crumble evenly over top of the jam and press it down gently. Bake for 40-50 minutes, or until the top is lightly golden.
  6. Allow the bars to rest in the pan for 15 minutes before cutting and serving.
