Pumpkin Pancake Perfection

Prep: 15 minutes | Serves: 4

Ingredients

  • 1 cup all purpose flour
  • 3 teaspoons coconut sugar
  • 1 teaspoon pumpkin spice
  • 1 1/2 teaspoons baking powder
  • 1 pinch salt
  • 2/3 cup milk
  • 1 large egg
  • 2 tablespoons pure pumpkin puree
  • 2 tablespoons Chosen Foods 100% Pure Avocado Oil
  • 1 teaspoon vanilla extract
  • Chosen Foods 100% Pure Avocado Oil Spray
  • Whipped cream or yogurt, for topping

Directions

  1. In a large mixing bowl whisk together the flour, sugar, pumpkin spice, baking powder & salt.
  2. Add the milk, egg, pumpkin puree, avocado oil & vanilla extract.
  3. Stir until the batter just comes together, a few lumps are okay.
  4. Heat skillet over medium heat & lightly coat with the avocado oil spray.
  5. Add the batter in dollops, about 2 to 3 tablespoons per pancake.
  6. Cook for 1 to 2 minutes on each side, until golden. Repeat with remaining batter.
  7. Transfer pancakes to a serving plate.
  8. Garnish with whipped cream & a spoonful of pumpkin spice caviar.
