Ingredients For Cozy Apple Pie

Ingredients for Pie Crust

1 lb (3¾ cups) All-Purpose Flour

10 oz Chosen Foods Avocado Oil Shortening, refrigerated

1/3 oz (2 tsp) salt

5 oz (½ cup +2 tbsp) Ice Water

Ingredients for Apple Filling

2 lbs (8 Cups) Fresh Apples, Fuji or Granny Smith

8 oz, then 2 oz Water

(1 cup, then ¼ cup)

2 oz, then 1 oz Sugar

(¼ cup, then 2 tbsp)

½ tsp Cinnamon

1/8 tsp Nutmeg

1 Zest from 1 lemon

1 ¼ oz (½ cup) All-Purpose Flour

1 Egg

Directions For Cozy Apple Pie

Directions for Pie Crust

  1. Cut shortening into ½" cubes
  2. Mix  the shortening with flour and salt and put into mixer with a paddle attachment.
  3. Mix until you have “pea-size” clumps in the mixture.
  4. Add ice water and mix just until just combined.
  5. Wrap and chill for at least 2 hours
  6. Divide dough into 2 pieces and roll out on a floured surface to about ¼ in thickness. Place one sheet into a pie pan.

Directions for Apple Filling

  1. Peel and slice the apples
  2. Combine first 8 oz (1 cup) of water, 2 oz (¼ cup) of sugar, spices & lemon zest in a small pot and bring to a boil.
  3. Combine the flour and 1 oz (2 tbsp) of sugar in a small bowl, then stir-in 2 oz (¼ cup) of water.
  4. Add the flour slurry to the boiling water, stirring constantly until it thickens.
  5. Mix in the sliced apples and fill the pie shell with the mixture.
  6. Cover with a top crust or lattice, brush with egg wash and sprinkle with some coarse sugar if desired.
  7. Bake at 420F for about 40 to 45 minutes or until golden brown
