Luscious Buttery Lemon Mayo with Avocado OIl
Try this delicious lemon mayo from Paleo Parents!
Ingredients
- 3 Egg Yolks
- 2 tbsp of Fresh Lemon Juice
- 1 Large Pinch of The Spice Lab Finely Ground Pure Himalayan Salt
- 1 tsp Annies Homegrown Dijon Mustard
- 2 Cups of Chosen Foods 100% Pure Avocado Oil
- Extra Lemon Juice Simply Organic Cayenne Pepper and Extra Salt to Taste
Instructions

Combine the first four ingredients and allow to come to room temperature for 30 minutes.

Whisk egg yolk mixture for 3-5 minutes vigorously until doubled in volume.

Add in Avocado Oil, drop by drop at first, then in a stead stream, whisking constantly.

After all the oil is emulsified, add in lemon juice, cayenne and salt to taste and whisk again to combine. Store in a mason jar in the fridge for up to a week.
