Sweet & Smoky Chia BBQ Sauce with Pulled Pork

Healthy, homemade BBQ sauce with a sweet and smoky edge. The sauce is thickened with omega-3 rich chia seeds and creates a moist and flavorful coating for slow cooked pork. Serve over mashed potatoes, on a bun, in a breakfast scramble, or any way you like!

Ingredients

  • 3-4 lb boneless pork shoulder
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 1 15- oz can tomato sauce
  • 2 tomato paste
  • ½ cup apple cider vinegar
  • 2 raw honey
  • 2 blackstrap molasses
  • 1 tsp sweet paprika
  • 1 tsp smoked paprika
  • 1 tsp ground mustard
  • ½ tsp chipotle powder
  • 2 tsp sea salt plus more for seasoning
  • 1 tsp ground pepper plus more for seasoning
  • ½ cup chia seeds

Instructions

  1. Rinse and pat dry pork shoulder. Season generously with salt and pepper. Place the pork shoulder in a large slow cooker (5 quart minimum). Cover with chopped onion and minced garlic.
  2. Combine remaining ingredients in a large bowl and whisk until smooth. Pour into the slow cooker and cover the pork completely. Cook on high for 6 hours, or until pork is tender enough to pull apart.
  3. Remove the pork from the slow cooker and shred with two forks. Skim as much fat from the surface of the sauce as possible. Whisk sauce well and incorporate into shredded pork. Serve warm.
