Revive the tuna of your youth with this Apple Almond Tuna Salad. Bursting with flavor from fresh grapes, apple, red onion, and almond, even the pickiest eater won’t mind the canned tuna mixed in. Serve over large lettuce cups, crackers, or your favorite bread slices.
Yields: 2 servings
5 oz. canned tuna or chicken
½ medium crisp apple, chopped
½ c. halved grapes
1 large pickle, chopped
¼ medium red onion, finely chopped
¼ c. sliced almonds
3 tbsp. Chosen Foods Mayonnaise
1 tbsp. whole grain mustard
1 tbsp. fresh lemon juice
½ tsp. sea salt
¼ tsp. black pepper
For serving: butter lettuce, romaine, crackers, or bread
Drain the canned tuna. Combine the tuna, apple, grapes, pickles, red onion, almonds, mayonnaise, mustard, lemon juice, sea salt, and black pepper in a large bowl. Stir well with a fork to break up the tuna.
Serve at room temperature and store extras in the refrigerator for up to a week.
