Chia Egg Scramble

Add chia to your morning eggs for an extra nutritional boost. When cooked, chia seeds match the texture of eggs so closely that you’ll hardly notice that they’re there! Hearty sausage, squash, and greens fill this scramble to provide a one-pan meal that will leave you satisfied and energized for the day ahead.

Ingredients

  • 4 eggs
  • 2 tbsp chia seeds
  • 1 tbsp filtered water
  • Chosen Foods Avocado Oil Spray
  • 8 oz breakfast sausage
  • 1 cup shredded uncooked butternut squash any squash will work here or even sweet potato
  • 2 cups hearty greens (kale, collard, spinach, etc.)
  • 20 cherry tomatoes halved
  • salt & pepper to taste
  • For garnish: chopped chives or scallions avocado, or grated cheese of choice


Instructions

  1. Combine eggs, chia seeds, and filtered water in a bowl and whisk well to combine. Set aside.
  2. Spray a non-stick skillet or cast iron pan with avocado oil and cook sausage over medium heat until brown and crumbled, about 5 minutes. Add squash and greens and cook until wilted, about 3 minutes. Add cherry tomatoes and cook until just warm, about 60 seconds.
  3. Turn the heat to medium low and add whisked egg mixture. Turning mixture together continuously with a spatula, cook until eggs are just set. Season with salt & pepper to taste. Remove from heat and serve with garnishes, as desired.


Recipe Notes

To make this meal for a larger group, simply add 1 T. chia seeds per 2 eggs used.
