1 lb Chicken Thighs, boneless
1 lb Chosen Foods Avocado Oil Shortening
Marinade for Crispy Fried Chicken Recipe
7 oz (¾ cup + 1 tbsp) Pickle Juice
1 Egg
2 tbsp Hot Sauce
1 tbsp Sugar
2 tsp Salt
1 tsp Granulated Garlic
Dredge for Crispy Fried Chicken Recipe
1 ¼ cups All-Purpose Flour
1 tbsp Baking Powder
¾ cup + 3 tbsp Rice Flour
1 tsp Salt
Directions For Crispy Fried Chicken Recipe
- Place whole (or cut down) pieces of raw chicken into a bowl.
- Whisk together egg, hot sauce, sugar, salt, garlic, and pickle juice to make the marinade.
- Pour the marinade over the chicken and allow it to marinade for 1 hour.
- Prepare the dredge by whisking together the dry ingredients.
- In a large wide thick bottom skillet, begin heating 1-2 cups avocado shortening (or enough to fry, depending on the width of your pan)
- Using a high temp cooking thermometer, bring the oil up to a constant 350F.
- Drain the chicken from the batter, and place into the dry dredge.
- Toss and squeeze the dredge onto the chicken to create a crackly crust
- Allow to rest on a wire rack for 10 minutes before frying.
- Carefully place each piece of chicken into the hot fat, being careful not to overcrowd the pan.
- Fry the chicken until golden brown, tossing and moving as needed for even cooking, approximately 8 minutes.
- Immediately transfer to a wire rack to drain, and season with salt while still warm.
