Ingredients
- 1/2 cup Chosen Foods Avocado Oil
- 1/4 cup red wine vinegar
- 1 1/2 tsp sea salt
- 1 tsp ground pepper
- 1 tsp dried parsley
- 3 garlic cloves minced (or more, to taste)
- Optional: sprig of fresh rosemary
- 1 small onion
- 1 lb skirt steak or cut of choice
Instructions

Combine avocado oil, vinegar, salt, pepper, parsley, garlic and rosemary (if using) in a small bowl. Whisk together to combine. Grate onion with a box grater or microplane into fine shreds. Add to marinade and mix. Reserve 2 tablespoons of the marinade for coating the steak after it's cooked.

Pour marinade into a large zip-top bag. Add steak, remove air, seal, and coat steak with marinade by kneading the bag with your hands. Place the bag in a shallow dish (to catch possible leakage, place in the fridge for 4+ hours.

Remove steak from fridge 30 minutes before cooking. Heat a dry non-stick skillet over high heat. Once hot (and not before!), remove steak from marinade, leaving some excess marinade on the meat, and add to the pan. Cook until browned, about 1-2 minutes per side for medium rare.

Move cooked steak to a plate, coat with reserved marinade, and cover with tinfoil to rest 5 minutes before serving. Enjoy immediately!
Recipe Notes
If using a different cut of meat, be sure to check cooking instructions for that cut before cooking. This marinade works well with chicken also.
