Ground Beef, Millet and Veggie Fritters

Ingredients

  • 1/2 lb grass-fed ground beef
  • 1 cup cooked millet
  • 1 small sweet onion
  • 1 small zucchini
  • 1 1/2 cup fresh spinach
  • 1/4 cup golden raisins
  • 3 eggs whisked
  • 1 tsp fresh oregano chopped
  • 1 tsp sea salt
  • 1/2 tsp pepper
  • 2-4 100 % Pure Avocado Oil

Instructions

  1. Using a box grater, shred onion and zucchini. Place the grated pieces into a tea towel or cheesecloth and squeeze some of the juices out over the sink (you can also do this with your hands but it's a bit messier!). 

  2. Move the veggies to a bowl and add remaining ingredients (aside from the avocado oil). 

  3. Mix together well with your hands or a large fork, careful not to over-mix. Set aside for 5-10 minutes to let the mixture bind together a bit.

  4. Meanwhile, heat 2 avocado oil to a large sauté pan over medium heat. 

  5. Shape fritters with your hands to about 1/2” thick and 3” wide and add to hot oil. Do not crowd the pan, about 3-4 fritters at a time is ideal.

  6. Cook until brown, about 5 minutes per side. Add more oil to the pan in between batches, as needed. 

  7. Move cooked beef fritters to a cooling rack and sprinkle with sea salt. Best served warm or at room temperature.
