Pear & Pomegranate Quinoa Salad
White quinoa has a light, nutty flavor that pairs well in both savory and sweet salads. Using pomegranate and pear, crisp cucumber, roasted pecans, and peppery arugula, you’ll have a satisfying burst of flavor in every bite. Our naturally gluten-free quinoa gives the salad nourishing vitamins, minerals and fiber, making this a great side salad or even main course with a little added protein on top.
Ingredients
For the Honey Dijon Dressing
- ¼ cup Chosen Foods 100% Pure Avocado Oil
- ½ lemon juiced
- 2 tbsp Dijon mustard
- 2 tbsp raw honey
- 1 clove garlic
- 1 tsp sea salt
- ½ tsp ground pepper
For the salad
- 2 cup cooked white quinoa
- ½ cup cucumber chopped
- ¼ cup roasted pecans chopped
- 1 pear chopped
- 1 medium pomegranate deseeded
- 1 cup arugula
- 2 scallions chopped
- Optional for garnish: shavings of Romano cheese
Instructions

Place all the dressing ingredients in a blender. Blend on high for 30 seconds to emulsify. Set aside.

Make the salad by combining all remaining ingredients and pouring the dressing over the top. Mix well and allow it to sit for 5-10 minutes before serving to let the dressing soak in. Top with Romano cheese, as desired. Best served at room temperature.
