Avocado Stuffed with Winter Greens

The heavy meals, sugar laden desserts and lack of sleep during the holidays can wreak havoc on our immune systems. Now is the perfect time for a little reset. Enter these gorgeous avocados stuffed with winter greens. They're full of heart healthy fats, fiber, Vitamin C, and antioxidants - just the nutritional boost our bodies are craving. They're super simple to make, yet elegant enough to serve at a dinner party.

Ingredients

  • 4 ripe avocados pitted and sliced lengthwise
  • 3 cups baby kale or arugula leaves
  • 3 oranges peeled, seeded, thinly sliced into small wedges
  • ¼ cup feta cheese crumbled
  • 2 radishes thinly sliced
  • ½ cup pomegranate arils
  • 2 tbsp Chosen Foods 100% Pure Avocado Oil
  • Juice of ½ lemon
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • ¼ tsp red chili pepper flakes
  • 1-2 tbsp chia seeds
  • 1 tbsp hemp hearts

Instructions

  1. In a medium bowl, combine the greens, sliced oranges, feta, radishes, and half of the pomegranate arils. Drizzle over the avocado oil and add a squeeze of lemon juice. Season with salt, black pepper, red chili flakes, and half of each of the chia seeds and hemp hearts. Toss to coat.
  2. Fill the avocados with the salad and place onto a serving dish. Garnish each halve with a few more pomegranate arils, a little extra chia seeds and hemp, a sprinkle of sea salt, and just before serving, finish them with a light drizzle of avocado oil. Serve immediately.

Recipe Notes

Just before filling the avocados with the salad mixture, brush some lemon juice over each half to prevent them from oxidizing.
