Ingredients For Coconut Popcorn Shrimp Recipe

1/3 cup Chosen Foods 100% Pure Avocado Oil (or enough to cover bottom)
1 lb large shrimp, peeled and deveined
1 cup all-purpose flour
2 large eggs, beaten
1/3 cup Water
1 cup panko breadcrumbs
1 cup shredded unsweetened coconut
Salt and pepper to taste
Sweet Chili Aioli ingredients:
3 tbsp Chosen Foods Classic Mayo
2 tbsp sweet chili sauce
Salt and pepper to taste

Directions For Coconut Popcorn Shrimp Recipe

  1. In one bowl, mix the flour with garlic powder, paprika, salt, and pepper, beaten eggs, and water. Mix until smooth like pancake batter. In a third bowl, mix the panko breadcrumbs and shredded coconut.
  2. Dredge each shrimp in wet batter, then coat with the panko and coconut mixture, pressing gently to adhere.
  3. Heat Chosen avocado oil in a deep skillet over medium heat until it reaches 350°F (175°C). Fry the shrimp in batches for about 2-3 minutes per side, until golden brown and crispy. Remove and drain on a paper towel-lined plate, or wire rack
  4. Make the Sweet Chili Aioli: In a small bowl, whisk together Chosen avocado mayo, sweet chili sauce. Season with salt and pepper to taste.
  5. Serve the crispy coconut popcorn shrimp with the sweet chili aioli on the side for dipping. Garnish with lime wedges!
