Ingredients For Grilled Cheese and Tomato Soup Recipe
2 slices sourdough bread
1.5 oz sharp cheddar cheese (freshly grated)
1.5 oz pepper jack cheese (freshly grated) 1 oz mozzarella cheese (freshly grated)
24 oz cherry tomatoes (halved) 3 roma tomatoes (quartered)
1 carrot (roughly chopped)
1 yellow onion (roughly chopped) 1 bulb of garlic (halved)
1 bundle of fresh thyme
Salt & pepper
Italian seasoning
Chicken stock (or water) as needed Heavy cream as needed
Optional garnish Fresh Basil Heavy cream
Directions For Grilled Cheese and Tomato Soup Recipe
- Preheat your oven to 350°F. Add all of the tomatoes, carrot, onion, garlic, and the bundle of thyme to a sheet pan. Drizzle Chosen Foods Avocado Oil and cover all of the veggies and aromatics. Season with salt, pepper, and Italian seasoning and roast in the oven until the veggies are caramelized and golden brown. Roasting time will vary depending on your oven, but this should take anywhere from 30-45 minutes.
- Preheat your pan over low heat and spray with enough Chosen Foods Avocado Oil Spray to cover the bottom of the pan. While that preheats, add 1.5 tbsp of Chosen Foods Classic Mayo to one side of each slice of bread. Add one slice of bread to the pan, mayo side down, and top with all of your shredded cheese. Top with the other slice of bread, mayo side up. Cook on low heat until the bottom slice of bread is golden brown and the cheese is starting to melt. Flip over the grilled cheese and repeat on the other side.
- When the veggies are done roasting, remove from the oven and let them cool for 10 minutes. After they’ve cooled down, add the tomatoes, onion, and carrot to a blender. Squeeze the garlic cloves into the blender along with the leaves from the fresh sprigs of thyme, a splash of heavy cream, and a splash of chicken stock (or water) and blend until smooth. Use as much or as little heavy cream and chicken stock as you want until you get your desired consistency.
- Add the soup to a bowl, garnish with heavy cream and fresh basil leaves and enjoy!
