Farro Caprese Salad made with Chosen Foods Apple Cider Vinegar Dressing & Marinade

It’s hard to beat the classic combination of mozzarella, tomatoes, and fresh basil. Our twist kicks the whole recipe up a notch—literally—with the addition of a base layer of farro and a richer version of mozzarella called burrata. Drizzle the entire salad with a blend of Apple Cider Vinegar Dressing and Greek yogurt for a tangy, creamy finish in every bite.

  1. In a small bowl, mix together the Greek yogurt and Apple Cider Vinegar Dressing & Marinade until combined and reserve to dress the salad.
  2. On a large platter, place the cooked farro in an evenly distributed layer. Add sliced heirloom tomatoes and cherry tomatoes, then sprinkle with salt and freshly ground pepper.
  3. Break the burrata into quarters and place it on top of the tomatoes.
  4. Place the fresh basil leaves on the tomatoes and drizzle the reserved dressing on top. Enjoy immediately.
