Guajillo-Pasilla Chili Chicken Street Tacos

Mexico is famous for its innumerable varieties of chilies and savory, spicy dishes. We've used two of the country's most famous chilies in our new Guajillo-Pasilla Chili Simmer Sauce. Served over authentic corn tortillas, this recipe's tender, pulled chicken tacos, topped with queso fresco, radish, avocado, cilantro, and lime, are sure to impress.

  • 20 “street taco” 4-inch corn tortillas
  • 1 white onion, diced
  • 1 cup cherry tomatoes, halved
  • 3 radishes, thinly sliced
  • 1 avocado, sliced
  • ½ cup crumbled queso fresco cheese
  • Handful fresh cilantro
  • 2 limes, cut into wedges

Directions:

  1. Add the avocado oil to a Dutch oven or pot set over medium-high heat. When the oil is hot, place the chicken thighs in the pan and season with salt and black pepper. Sear until golden brown on both sides.
  2. Pour the simmer sauce and chicken stock over the chicken to submerge. Cover with a lid and simmer on low for 15 to 20 minutes, or until meat is cooked through and tender, and falls away from the bone when pulled with a fork. Discard bones and set aside while preparing toppings.
  3. Heat the tortillas and place onto serving platter or plates. Put about 2 tablespoons of chicken with its sauce over each tortilla, top with diced onion, sliced tomatoes, radishes, and avocado. Sprinkle with cheese and top with fresh cilantro. Serve with lime wedges. Enjoy!
