2 cups chicken broth (plus extra i needed)
For Filling:
1 pound ground beef
1 small onion, diced
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika 1/2 teaspoon salt
1/4 teaspoon black pepper 1/2 cup red enchilada sauce
Corn husks (soaked in warm water for 30 minutes)
Directions For Beef Tamales Recipe
1. Prepare the Filling: In a skillet over medium heat, sauté the onion and garlic until softened. Add the ground beef and cook until browned. Stir in cumin, chili powder, smoked paprika, salt, pepper, and enchilada sauce. Simmer for 5 minutes. Set aside.
2. Prepare the Masa Dough: In a large bowl, mix masa, baking powder, and salt. In a separate bowl, beat Chosen Foods Avocado Oil Shortening until fluffy. Gradually add the masa mixture to the shortening, alternating with chicken broth, until a soft, spreadable dough forms.
3. Assemble the Tamales: Spread 2-3 tablespoons of masa dough onto the center of a soaked corn husk, leaving room at the edges. Add a spoonful of beef filling to the center. Fold the sides of the husk over the filling, then fold the bottom up.
4. Steam the Tamales: Place tamales upright in a steamer pot. Steam over medium heat for 1.5 to 2 hours, checking periodically to ensure there's enough water. Tamales are done when the masa easily pulls away from the husk.
5. Serve: Let tamales cool slightly before serving with salsa, sour cream, or your favorite toppings.
