INGREDIENTS FOR FLUFFY AND FLAKY BISCUITS 

Ingredients

½ cup plus 1 tbsp Chosen Foods Avocado Oil Shortening
3⅓ cups All-Purpose Flour
2 tsp Baking Powder
1 tsp Baking Soda
1 tbsp plus 2 tsp Sugar
1 tsp Salt
10½ oz Buttermilk

 

DIRECTIONS FOR FLUFFY AND FLAKY BISCUITS 

Directions

1. Place shortening in the freezer to chill (approx 20 min), while you measure and prepare the remaining ingredients.
2. Combine the dry ingredients in a bowl and whisk to combine.
3. Using a dough cutter, or your fingers, cut the shortening into the flour mixture. Working quickly not to melt it, and to disperse the fat into various size pieces covered in flour. The result should be coarse, and mealy.
4. Slowly drizzle in cold buttermilk and mix to combine.
5. The mixture will be sticky, transfer to a well dusted flour covered clean work surface.
6. Press the dough into a large rectangle, and fold in half.
7. Turn the dough, press out into a medium sized rectangle and fold again.
8. Repeat this process for 5-6 series of folds.
9. Wrap the dough in plastic wrap and place in the fridge to chill for 20 minutes.
10. Preheat the oven to 400F.
11. Once the dough is chilled, dust a surface with flour and roll the dough out with a rolling pin to slightly less than 1” in thickness.
12. Using a ring cutter or glass jar, cut the dough into rounds, and transfer to a parchment lined baking tray.
13. Optionally brush the surface of the biscuits with buttermilk, eggwash,
or melted butter.
14. Bake for 14 minutes, rotating halfway through.
