Vibrant Veggie Salad with Lemon Garlic Dressing

Ingredients
  • ½ cup carrot ribbons
  • ¼ cup watermelon radish, cut into thin rounds
  • 1 small Persian cucumber, sliced lengthwise
  • 3 cups organic spinach
  • 1 medium avocado, sliced
  • ½ cup cherry tomatoes, halved
  • ½ cup snap peas, halved lengthwise
  • ⅓ cup Chosen Foods Lemon Garlic Dressing & Marinade
  • ¼ tsp salt
  • 4 cracks fresh ground pepper
  • 1 tbsp edible flowers
  • ½ tsp everything seasoning
  • 2 tbsp alfalfa sprouts
Instructions
  1. Wash and peel one carrot and use potato peeler to make the carrot ribbons. Then using a mandolin, slice the watermelon radish and cucumber, being mindful of the sharp blade.
  2. To assemble the salad, start with two identical bowls and add the ingredients to both in this order: spinach, carrot ribbons, watermelon radish rounds, avocado slices, cucumber slices, cherry tomatoes and sugar snap peas.
  3. Sprinkle the salad with salt and freshly ground pepper. Drizzle Lemon Garlic Dressing over top, then add edible flowers, everything seasoning, and alfalfa sprouts.
