Ingredients for Crispy-Skinned Salmon With Charred Scallion Gremolata Recipe: 

  • 2 bunches scallions, trimmed
  • 2 tsp., plus 6 Tbsp. Chosen Foods 100% Pure Avocado Oil
  • 1 cup finely chopped parsley
  • 2 cloves garlic, finely grated
  • 2 tsp. finely grated lemon zest
  • ¼ cup fresh lemon juice
  • 4 4-6 oz skin-on salmon fillets, patted dry
  • kosher salt
  • lemon wedges, for serving

Directions for Crispy-Skinned Salmon With Charred Scallion Gremolata Recipe: 

  1. Preheat broiler on high. Place scallions on a rimmed baking sheet and drizzle with 2 tsp. Chosen Foods 100% Pure Avocado Oil. Season lightly with salt, toss to coat, and arrange in a single layer. Broil scallions, turning once, until lightly charred, about 4 minutes (check them often, as all broilers are different). Let cool, then finely chop and transfer to a medium bowl. Add parsley, garlic, lemon zest, and lemon juice and stir to combine. Stir in 4 Tbsp. Chosen Foods 100% Pure Avocado Oil to create a spoonable sauce; season with salt. Set charred scallion gremolata aside until ready to serve.

  2. Season salmon fillets all over with kosher salt. Heat remaining 2 Tbsp. Chosen Foods 100% Pure Avocado Oil in a large skillet over medium-high. Cook salmon skin-side down, undisturbed, until skin is crisp and deeply browned and flesh is opaque halfway up sides, about 5 minutes. Turn fillets over and cook just until opaque throughout, about 4 minutes.
  3. Serve salmon fillets topped with charred scallion gremolata.
