The sweet crunch of carrots pairs well with rich Indian spices in this unique side dish. The Toasted Sesame Oil and anciently-used pungent spices are both high in antioxidants, making this side dish more healthful than just enjoying carrots on their own. The wide array of spices gives a deep, complex flavor that makes these veggies pretty addicting!
Indian Spiced Sesame Carrots
*Indian Spice Mixture:
- 1 tsp sea salt
- ½ tsp ground black pepper
- ½ tsp cumin
- ½ tsp garlic powder
- ½ tsp ground coriander
- ½ tsp ground cinnamon
- ½ tsp ground turmeric
- ¼ tsp powdered onion
- ¼ tsp ground ginger
- cloves pinch ground
- 1 lb fresh organic carrots washed and peeled
- Chosen Foods Avocado Oil
- Oi! Toasted Sesame Oil
Preheat the oven to 425°F. In a small bowl, combine all the spices and whisk together well.
Line a sheet pan with parchment or aluminum foil. Place the carrots in the pan and toss with Pure Avocado Oil to coat. Pour the spices over and toss the carrots well until fully coated with both oil and spices. Arrange the carrots in rows and avoid letting them touch (this will promote browning).
Cook for 30-45 minutes, tossing midway through, or until slightly golden. Drizzle with Roasted Sesame Oil while warm and serve immediately.
This mixture could be substituted with an Organic Garam Masala mix if that’s what you have on hand.
